Avocado Banana Toddler Cookies


He can never wait for them to cool all the way!
Avocado Banana cookies (with a few chocolate chips) 

INGREDIENTS

1/4 cup of mini chocolate chips
1/2 cup raisins (re-hydrated by soaking 5 mins in boiling water/drained)
1/4 cup butter
1 ripe avocado
1 ripe banana (The riper the better.  Riper bananas bring more sweetness)
1/4 - 1/3 cup pure apple juice concentrate (thawed) depending on how sweet you want it. Increase juice for a sweeter cookie.
2 large eggs
2 teaspoons vanilla

1 cup unsifted white flour
1 cup unsifted wheat flour
1/4 cup rolled oats
1 teaspoon baking soda
1/2 teaspoon cinnamon
4 TBLSP of organic flax seeds
INSTRUCTIONS

Heat oven to 375ºF. 

Stir flour with baking soda, rolled oats, cinnamon and flax seeds; set aside.

In mixer, blend butter, ripe banana, avocado, raisins, vanilla and apple concentrate at medium speed until creamy.

Add eggs one at a time.

Mix on low speed until incorporated.  It turns a pretty light green and looks smooth.

Gradually blend dry mixture into creamed mixture. (Or if you are using a Ninja mixer, just blend all together for about 1 min)

Stir in mini chocolate chips.

Drop by tablespoon onto parchment lined cookie sheets and smash down a little with back of wet spoon if you want more of a cookie look. (These cookies do not flatten while baking) . Bake for 12-13 minutes.
You end up with lovely soft cake like cookies that toddlers love to eat!


*If I am making these for my older kids, I will add 1/4 cup of brown sugar or coconut sugar, or you could add a couple of squeezes of honey.  If you do that, blend it with the banana avocado mash.


*If you feel like they are too soft, you can always increase your butter to a full stick.  That will help them be less doughy.

365 Days of Photos Postcard Project

Just another date night. She'd rather be watching Late Night...

While Jon and I were watching Conan O'Brien we heard him mention something about a DYI video contest. Well, I gave it a shot. I wrote some lyrics and Jon turned it into a song, recorded it and had an MP3 in my hands in record time. While he was recording the song, I was working on the little 30 second spot.

Know when to walk away.


I like Zach Braff. He is my "friend" on Myspace and I read his blog. So when he threw down the challenge to make a music video, I decided to go for it. What is the worst that could happen? I could look silly and maybe make a few people laugh? It is a win win situation! (Laughter = good)
The contest rules are that you had to *lip-sync to this song and somehow incorporate places specific to where you are. I tried to use every music video cliche' I could come up with, with such limited time and resources. (I had two days to get it done and I only had my little point and shoot to do it on. Darian was a HUGE help. She was the button pusher for the whole thing!) So, it ended up with loads of "Music video face" :-)
I used the Lakeview cemetery in a lot of this because it is close to my apartment and has many historical Seattle people buried there. It is also one of my personal favorite places to visit in the summer, it is quite pretty and peaceful. I was sticking to the rules, that is why it is how it is. If I was just making a video for this song I would have taken it another direction. It was, however, a very fun & funny challenge.


I searched around Youtube to see what other people did. So far this one is my favorite. (I'm a sucker for adorable tots playing air guitar.)




*When I uploaded the video to youtube, the compression knocked the sync a little out of whack. The original is better.

The bad news, my camera died and I lost a LOT of the pics and vids from the shows this last week.

The good news, by some awesome twist of fate, the ONLY vids that I did not lose, managed to be one song of each incarnation of The Posies!! YES!!

I made that!


My boss challenged us to make a dress out of recycled Stranger newspapers during last week's meeting. I decided to take that challenge. This is my beautiful friend, Bree modeling what I came up with. The hat, dress and bracelet are made up of recycled paper I found in the office.

Em decorates her little brother.


If you have not figured it out already, I am working on a children's book! I'm hoping to have it done and off to the printer by the end of the month. If you want to see some of the samples wander over to my doodle blog, I've been keeping them updated over there. I won't be using all of them, and I'm not posting EVERYTHING over there, there must be surprises! But you will get the general idea.
It is going to be a bunch of misfit doodles that I have written cute little poems for. I meant to just get them out of my head and onto paper, but it kind of organically took on a life of it's own. Hey, I'll take inspiration wherever I can get it! It feels great to be doing something creative!
